This mousse-like Strawberry Marshmallow Pudding is SO easy to make with only 4 ingredients!
250g fresh strawberries
25g caster sugar
150g mini marshmallows
200ml double cream
1. Chop the strawberries and put into a pan with 100ml water and the caster sugar. Boil for approx 5 mins until the sugar has dissolved and the strawberries are mushy. Mash roughly with a fork.
2. Add the marshmallows and stir until fully dissolve. Set aside to cool.
3. Whip the cream until just holding its shape. Add the cooled marshmallow mixture and mix gently. Spoon into your pots and refrigerate for at least 2 hours.
