Super easy muffins to satisfy any sweet tooth!


150g Lotus Biscoff spread

1/2 tsp baking powder

4 eggs

70g brown sugar

Optional toppings

Marshmallow spread

Lotus Biscoff biscuits


1. Preheat oven to 180C

2. Add Lotus Biscoff spread, sugar, baking powder and eggs to a bowl and whisk together until fully combined.

3. Fill cupcake liner 2/3 full with the mix and bake at 180C for 20-25 minutes until set. To test if the cakes are cooked, insert a clean skewer or wooden cocktail stick into the centre of one of the cakes and remove it. The cake is ready if the skewer comes out clean. If there are any crumbs attached to the skewer, pop the cakes back into the oven for a few minutes.

4. You can decorate however you like but I used marshmallow spread and made a small slit into the top of each cake and inserted a Biscoff biscuit - yum!
